A nutritious twist on the classic chicken parmesan, packed with protein and flavor, perfect for busy weeknights.
Ingredients
- 2 cups cooked and shredded chicken breast
- 1 cup cottage cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Fresh basil, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken, cottage cheese, marinara sauce, Italian seasoning, garlic powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.
- In a baking dish, drizzle olive oil to coat the bottom. Spread the chicken mixture evenly in the dish.
- Sprinkle shredded mozzarella and grated Parmesan cheese over the top of the chicken mixture.
- Bake in the oven for about 25-30 minutes, or until the cheese is bubbly and golden brown.
- Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh basil, if desired. Serve hot and enjoy!
Notes
Use leftover chicken for convenience and adjust seasoning according to taste. Bake in individual ramekins for a fun presentation.
