Description

A nutritious twist on the classic chicken parmesan, packed with protein and flavor, perfect for busy weeknights.


Ingredients

  • 2 cups cooked and shredded chicken breast
  • 1 cup cottage cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh basil, for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, cottage cheese, marinara sauce, Italian seasoning, garlic powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  3. In a baking dish, drizzle olive oil to coat the bottom. Spread the chicken mixture evenly in the dish.
  4. Sprinkle shredded mozzarella and grated Parmesan cheese over the top of the chicken mixture.
  5. Bake in the oven for about 25-30 minutes, or until the cheese is bubbly and golden brown.
  6. Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh basil, if desired. Serve hot and enjoy!

Notes

Use leftover chicken for convenience and adjust seasoning according to taste. Bake in individual ramekins for a fun presentation.
