Ingredients

  • 2 lbs ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 2-3 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Toppings: shredded cheese, sour cream, green onions, avocado slices, tortilla chips (optional)


Instructions

  1. Prep Your Ingredients: Gather and prepare all your ingredients. Dice the onion, bell pepper, and mince the garlic.
  2. Brown the Meat: In a large pot, cook the ground beef (or turkey) over medium heat until browned. Drain any excess fat.
  3. Sauté the Vegetables: Add the diced onion and bell pepper to the pot. Cook until soft, about 5 minutes. Stir in the minced garlic and cook for another minute.
  4. Build the Base: Sprinkle in the chili powder, cumin, paprika, salt, and black pepper. Stir and let cook for 1-2 minutes.
  5. Add the Tomatoes and Broth: Pour in the diced tomatoes, tomato sauce, and beef broth. Stir well to combine.
  6. Let It Simmer: Bring to a gentle boil, then reduce heat to low and let simmer for 30 minutes, stirring occasionally.
  7. Add the Beans: Stir in kidney beans and pinto beans. Simmer for another 10-15 minutes.
  8. Taste and Adjust: Taste the chili and adjust the seasoning as needed.
  9. Serve and Enjoy!: Serve the chili hot with your favorite toppings.

Notes

For a smokier flavor, add smoked paprika. For a thicker chili, let simmer longer or mix in some cornmeal. Leftover chili can be used as a filling for burritos or topping for baked potatoes.
