Description

Ingredients

  • 24 cookies Chocolate Sandwich Cookies
  • 1/2 cup Unsalted Butter (Melted)
  • 24 oz Cream Cheese (Softened)
  • 1 cup Granulated Sugar
  • 1/4 cup Cornstarch
  • 4 large Eggs (Room temperature)
  • 1 cup Sour Cream
  • 1 cup Heavy Cream
  • 2 tbsp Instant Espresso Powder
  • 1 tsp Vanilla Extract
  • 1 cup Heavy Whipping Cream
  • Optional Garnishes: Chocolate Shavings, Cocoa Powder Dusting, or whole Coffee Beans


Instructions

  1. Preheat oven to 325°F (163°C). Crush the chocolate sandwich cookies and mix with melted butter. Press into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then cool.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add cornstarch and mix well. Incorporate eggs one at a time, then add sour cream, heavy cream, espresso powder, and vanilla extract. Blend until smooth.
  3. Pour cheesecake filling over the cooled crust. Bake for 55-65 minutes, or until set but slightly jiggly. Turn off oven, crack the door, and let cool for 1 hour.
  4. Remove from oven and refrigerate for at least 4 hours or overnight. Whip heavy cream with powdered sugar until stiff peaks form. Spread or pipe over the cheesecake.
  5. Garnish with chocolate shavings, cocoa powder, or coffee beans. Slice and serve.

Notes

Use room temperature ingredients for best results. A water bath can improve creaminess. Don’t overmix after adding eggs to avoid cracks.
