Description

A quick and delicious Coconut Chicken Rice Bowl that brings tropical flavors of coconut and lime to your table in just 20 minutes.


Ingredients

  • 1 pound Boneless, skinless chicken breasts
  • 1 can Coconut milk
  • 2 tablespoons Soy sauce
  • 2 cups Cooked rice (jasmine, basmati, or brown rice)
  • 2 tablespoons Vegetable oil (or coconut oil)
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 1 teaspoon Lime juice
  • to taste Salt and pepper
  • 1/4 cup Fresh cilantro or green onions


Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the minced garlic and grated ginger to the pan, sautéing until fragrant (about 1 minute).
  3. Cut the boneless, skinless chicken breasts into bite-sized pieces. Add them to the skillet, seasoning with salt and pepper. Cook until the chicken is browned and cooked through, approximately 5–7 minutes.
  4. Pour in the coconut milk and soy sauce, stirring to combine. Allow the mixture to simmer for about 3–5 minutes until slightly thickened.
  5. Stir in the lime juice and adjust seasoning if needed.
  6. Serve the coconut chicken over a bed of cooked rice and garnish with fresh cilantro or green onions.
