Ingredients
- 4 cups Chicken broth
- 1 can Coconut milk
- 3 cloves Garlic (minced)
- 1 inch Ginger (grated)
- 1 pound Boneless chicken thighs
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 cup Long-grain white rice
- 2 stalks Green onions (for topping)
- 1 tablespoon Curry powder
- 1/2 teaspoon Turmeric
- 1/4 cup Fresh cilantro
- 2 pieces Lime wedges (for serving)
Instructions
- Prep the ingredients by mincing the garlic, grating the ginger, and slicing the green onions.
- In a large pot, heat oil over medium heat. Add garlic and ginger, sautéing for a minute.
- Add chicken thighs, seasoning with salt, black pepper, curry powder, and turmeric. Sear for 5-7 minutes until browned.
- Pour in chicken broth and coconut milk, bringing to a gentle boil. Reduce heat to low.
- Stir in rice, cover, and let it simmer for 20-25 minutes until rice is cooked.
- Remove chicken, shred it into bite-sized pieces, and return to the pot. Stir well.
- Adjust seasoning and serve garnished with green onions, cilantro, and lime juice.
Notes
For added flavor, consider using bone-in chicken or homemade broth. You can also add vegetables like peas or carrots during the last 10 minutes of cooking.
