Ingredients

  • 4 cups Chicken broth
  • 1 can Coconut milk
  • 3 cloves Garlic (minced)
  • 1 inch Ginger (grated)
  • 1 pound Boneless chicken thighs
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup Long-grain white rice
  • 2 stalks Green onions (for topping)
  • 1 tablespoon Curry powder
  • 1/2 teaspoon Turmeric
  • 1/4 cup Fresh cilantro
  • 2 pieces Lime wedges (for serving)


Instructions

  1. Prep the ingredients by mincing the garlic, grating the ginger, and slicing the green onions.
  2. In a large pot, heat oil over medium heat. Add garlic and ginger, sautéing for a minute.
  3. Add chicken thighs, seasoning with salt, black pepper, curry powder, and turmeric. Sear for 5-7 minutes until browned.
  4. Pour in chicken broth and coconut milk, bringing to a gentle boil. Reduce heat to low.
  5. Stir in rice, cover, and let it simmer for 20-25 minutes until rice is cooked.
  6. Remove chicken, shred it into bite-sized pieces, and return to the pot. Stir well.
  7. Adjust seasoning and serve garnished with green onions, cilantro, and lime juice.

Notes

For added flavor, consider using bone-in chicken or homemade broth. You can also add vegetables like peas or carrots during the last 10 minutes of cooking.
