Ingredients
- 3 cups all-purpose flour
- 1 teaspoon baking soda

- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1 large egg
- 1/2 cup unsulfured molasses
- Royal icing for decoration
Instructions
- In a bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt until well combined.
- In another large mixing bowl, beat together the softened butter and brown sugar until fluffy and light in color.
- Add the egg and molasses to the butter mixture, mixing well to combine.
- Gradually incorporate the dry ingredients into the wet mixture, stirring until everything is well combined.
- Divide the dough into two equal disks, wrap them in plastic wrap, and refrigerate for at least two hours.
- Preheat your oven to 350°F (175°C) and prepare your baking sheets by lining them with parchment paper.
- Roll out the chilled dough on a lightly floured surface to about 1/4 inch thickness. Use a gingerbread man cookie cutter to cut out shapes.
- Place the cut-out cookies on the prepared baking sheets, ensuring they have sufficient space in between.
- Bake in the preheated oven for 8-10 minutes or until the cookies are firm and lightly browned.
- Let the cookies cool completely on a wire rack before decorating them with royal icing.
