Ingredients
- 1 pound steak (sirloin, flank, or your favorite cut)
- 1/2 cup fresh cilantro, chopped (plus extra for garnish)
- Juice of 2 limes (about 1/4 cup)
- Salt and pepper to taste
- 1 cup rice (white, brown, or cauliflower rice)
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- 1 avocado, diced
- 1/2 cup creamy cilantro lime sauce (store-bought or homemade)
Instructions
- Marinate the Steak: In a bowl, combine lime juice, chopped cilantro, salt, and pepper. Add the steak and ensure it’s well coated. Let it marinate for at least 30 minutes.
- Cook the Rice: Prepare the rice according to package instructions. Once cooked, fluff it with a fork and mix in additional chopped cilantro and a squeeze of lime juice.
- Cook the Steak: Preheat your grill or skillet over medium-high heat. Remove the steak from the marinade and cook it to your desired doneness, usually about 4-6 minutes on each side for medium-rare.
- Assemble the Bowls: In serving bowls, place a scoop of the cilantro lime rice, followed by sliced steak, black beans, corn, and diced avocado.
- Finish with Sauce: Drizzle with creamy cilantro lime sauce and garnish with more chopped cilantro if desired. Serve immediately.
