Ingredients

  • 1/2 cup fresh cilantro, chopped (plus extra for garnish)
  • Juice of 2 limes (about 1/4 cup)
  • Salt and pepper to taste
  • 1 cup rice (white, brown, or cauliflower rice)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1/2 cup creamy cilantro lime sauce (store-bought or homemade)


Instructions

  1. Marinate the Steak: In a bowl, combine lime juice, chopped cilantro, salt, and pepper. Add the steak and ensure it’s well coated. Let it marinate for at least 30 minutes.
  2. Cook the Rice: Prepare the rice according to package instructions. Once cooked, fluff it with a fork and mix in additional chopped cilantro and a squeeze of lime juice.
  3. Cook the Steak: Preheat your grill or skillet over medium-high heat. Remove the steak from the marinade and cook it to your desired doneness, usually about 4-6 minutes on each side for medium-rare.
