Ingredients
- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup white wine (or broth for a non-alcoholic version)
- 2 cups chicken broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Creamy polenta or risotto (for serving)
Instructions
- Heat olive oil in a large pot over medium heat. Brown the chicken thighs on both sides, then remove and set aside.
- In the same pot, add the onions, carrots, and celery. Sauté until softened. Add the garlic and sauté for an additional minute.
- Pour in the white wine and scrape up any bits from the bottom of the pot. Let it reduce for a few minutes.
- Return the chicken thighs to the pot and add the chicken broth, thyme, and bay leaf. Season with salt and pepper.
- Bring to a simmer, then cover and cook on low heat for about 90 to 120 minutes until the chicken is tender.
- Serve the Chicken Thigh Osso Bucco over creamy polenta or risotto.
Notes
Allow the dish to rest after cooking for about 10 minutes for the flavors to meld.
