Description

A delightful and heartwarming dish featuring tender chicken thighs braised to perfection, bringing the flavors of Italy to your dinner table.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup white wine (or broth for a non-alcoholic version)
  • 2 cups chicken broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Creamy polenta or risotto (for serving)


Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the chicken thighs on both sides, then remove and set aside.
  2. In the same pot, add the onions, carrots, and celery. Sauté until softened. Add the garlic and sauté for an additional minute.
  3. Pour in the white wine and scrape up any bits from the bottom of the pot. Let it reduce for a few minutes.
  4. Return the chicken thighs to the pot and add the chicken broth, thyme, and bay leaf. Season with salt and pepper.
  5. Bring to a simmer, then cover and cook on low heat for about 90 to 120 minutes until the chicken is tender.
  6. Serve the Chicken Thigh Osso Bucco over creamy polenta or risotto.

Notes

Allow the dish to rest after cooking for about 10 minutes for the flavors to meld.
