A protein-packed, low-carb dish perfect for busy weeknights or meal prepping.
Ingredients
- 1.5 lbs Chicken Breast, cooked and shredded
- 1 large head Broccoli, cut into florets
- 1 cup Cheddar Cheese, shredded
- 1/2 cup Mozzarella Cheese, shredded
- 1 cup Heavy Cream
- 4 large Eggs
- 1/4 cup Parmesan Cheese, grated
- 1 tsp Garlic Powder
- 1/2 tsp Onion Powder
- Salt and Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Steam or lightly boil broccoli florets until they are tender-crisp.
- In a large bowl, combine shredded chicken, the cooked broccoli, cheddar cheese, and mozzarella cheese.
- In a separate bowl, whisk together heavy cream, eggs, parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Pour the egg mixture over the chicken and broccoli mixture. Mix well to combine all the ingredients.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Bake for 25-30 minutes, or until golden brown and set.
- Let the dish stand for a few minutes before serving.
Notes
Use cooked chicken for best results. Don’t overcook the broccoli for a nice texture contrast.
