A delightful twist on the classic Italian dessert combining mascarpone cheese, espresso, tart cherries, and amaretto liqueur for a burst of delicious flavors.
Ingredients
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1 cup espresso, cooled
- 1/2 cup amaretto liqueur
- 1 cup sweet cherries, pitted and halved
- 24 ladyfingers
- 1/4 cup granulated sugar
- Cocoa powder for dusting
Instructions
- Whip the heavy cream until stiff peaks form.
- In another bowl, mix the mascarpone cheese with the sugar until smooth.
- Gently fold the whipped cream into the mascarpone mixture.
- In a shallow dish, combine the cooled espresso and amaretto.
- Dip each ladyfinger quickly into the espresso mixture.
- Layer half of the dipped ladyfingers in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers and layer half of the cherries on top.
- Repeat with the remaining ladyfingers, mascarpone mixture, and cherries.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Before serving, dust with cocoa powder and garnish with additional cherries.
Notes
Use fresh ingredients for the best flavor. Chill overnight for optimal taste.
