Description

A creamy and flavorful casserole that combines savory ground beef, taco seasoning, and cheese, perfect for a low-carb lifestyle.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 0.5 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon taco seasoning
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 can diced tomatoes with green chilies (10 oz, drained)
  • 4 oz cream cheese (cubed and softened)
  • 0.5 cup sour cream
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
  • Chopped green onions or cilantro (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease an 8×8 or 9×9-inch baking dish.
  2. In a large skillet over medium heat, warm the olive oil. Add the ground beef and cook until browned.
  3. Add the finely chopped onion and minced garlic, sauté for 2–3 minutes until the onion is soft.
  4. Stir in the taco seasoning, salt, and black pepper until the beef is coated.
  5. Lower the heat to low and add the drained tomatoes, cream cheese cubes, and sour cream. Stir until the cream cheese melts.
  6. Spoon the mixture into the prepared baking dish and spread evenly.
  7. Sprinkle both shredded cheeses over the top.
  8. Bake for 20–25 minutes until the cheese is melted and golden brown.
  9. Let cool for a few minutes before serving and garnish with green onions or cilantro.

Notes

For a vegetarian option, substitute ground beef with diced bell peppers, mushrooms, and zucchini.
