Delicious and nutritious egg bites made with cottage cheese, perfect for breakfast or snacks.
Ingredients
- 6 large eggs
- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- Salt and pepper to taste
- Cooking spray or oil for greasing muffin tin
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the eggs, cottage cheese, shredded cheese, diced bell pepper, and diced onion. Season with salt and pepper.
- Grease a muffin tin with cooking spray or oil.
- Pour the egg mixture evenly into the muffin cups, filling each one about 3/4 full.
- Bake for 15-20 minutes, or until the egg bites are firm and lightly golden on top.
- Let them cool slightly before removing from the muffin tin. Enjoy warm, or refrigerate for meal prep!
Notes
Use fresh ingredients and consider flavor variations such as spinach and feta or bacon and cheese.
