A delightful twist on traditional chili, mixing savory chicken, spicy sausage, and shrimp with creamy white beans and corn. Perfect for chilly evenings or gatherings.
Ingredients
- 1 lb chicken breast, cooked and shredded
- 1 cup andouille sausage, sliced
- 1 cup shrimp, peeled and deveined
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cans white beans, drained and rinsed
- 4 cups chicken broth
- 1 cup corn (frozen or canned)
- 2 tsp Cajun seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup sour cream (optional, for serving)
- Chopped green onions (for garnish)
Instructions
- In a large pot, heat a little oil over medium heat. Add diced onion and garlic, and sauté until translucent.
- Add the andouille sausage and cook until browned.
- Stir in the shredded chicken, shrimp, white beans, chicken broth, corn, Cajun seasoning, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
- Serve hot with a dollop of sour cream on top and garnish with chopped green onions.
Notes
For a spicier kick, add more Cajun seasoning or chopped jalapeños. You can use rotisserie chicken to save time.
