Description

A delightful twist on traditional chili, mixing savory chicken, spicy sausage, and shrimp with creamy white beans and corn. Perfect for chilly evenings or gatherings.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup corn (frozen or canned)
  • 2 tsp Cajun seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup sour cream (optional, for serving)
  • Chopped green onions (for garnish)


Instructions

  1. In a large pot, heat a little oil over medium heat. Add diced onion and garlic, and sauté until translucent.
  2. Add the andouille sausage and cook until browned.
  3. Stir in the shredded chicken, shrimp, white beans, chicken broth, corn, Cajun seasoning, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
  5. Serve hot with a dollop of sour cream on top and garnish with chopped green onions.

Notes

For a spicier kick, add more Cajun seasoning or chopped jalapeños. You can use rotisserie chicken to save time.
