Description

Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  3. Stir in the garlic and cook for another minute.
  4. Add the chopped cabbage, diced tomatoes, vegetable broth, dried thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 30 minutes, until the cabbage is tender.
  6. Adjust seasoning to taste and serve warm.

Notes

For a thicker soup, blend a portion before serving. Garnish with fresh herbs like parsley for added flavor.
