Ingredients
- 1 head of cabbage, chopped
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves of garlic, minced
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
- Stir in the garlic and cook for another minute.
- Add the chopped cabbage, diced tomatoes, vegetable broth, dried thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 30 minutes, until the cabbage is tender.
- Adjust seasoning to taste and serve warm.
