Description

A creamy and flavorful butternut squash soup, perfect for cooler weather. Easy to make and packed with nutrients.


Ingredients

  • 1 butternut squash, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon nutmeg (optional)
  • 1/2 cup coconut milk (optional)


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sautéing until softened.
  3. Stir in the diced butternut squash and cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes, or until the squash is tender.
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Return to the pot, stir in nutmeg and coconut milk, and season with salt and pepper to taste.
  8. Serve hot.

Notes
