Ingredients
- 1 butternut squash
- Ravioli dough
- 4 tablespoons butter
- Fresh sage, to taste
- Grated Parmesan cheese, to taste
- Salt, to taste
- Pepper, to taste
- Olive oil, for drizzling
Instructions
- Preheat oven and roast the butternut squash until tender.
- Mash and mix the roasted squash with salt, pepper, and grated Parmesan.
- Roll out the ravioli dough and cut into squares.
- Place a spoonful of squash filling on half of the squares, then top with the other half, sealing edges with water.
- Cook ravioli in boiling water until they float.
- In a skillet, melt the butter and add sage until fragrant.
- Toss the cooked ravioli in sage butter and serve warm, garnished with additional Parmesan.
Notes
Make sure to roast the butternut squash until very tender for a smooth filling. Try adding herbs or using ricotta cheese for variation.
