Description

A delightful dish featuring roasted butternut squash combined with homemade ravioli, perfect for cozy dinners or special occasions.


Ingredients

  • 1 butternut squash
  • Ravioli dough
  • 4 tablespoons butter
  • Fresh sage, to taste
  • Grated Parmesan cheese, to taste
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for drizzling


Instructions

  1. Preheat oven and roast the butternut squash until tender.
  2. Mash and mix the roasted squash with salt, pepper, and grated Parmesan.
  3. Roll out the ravioli dough and cut into squares.
  4. Place a spoonful of squash filling on half of the squares, then top with the other half, sealing edges with water.
  5. Cook ravioli in boiling water until they float.
  6. In a skillet, melt the butter and add sage until fragrant.
  7. Toss the cooked ravioli in sage butter and serve warm, garnished with additional Parmesan.

Notes

Make sure to roast the butternut squash until very tender for a smooth filling. Try adding herbs or using ricotta cheese for variation.
