Description
A simple and delicious side dish of tender baby potatoes tossed in rich butter and fragrant garlic.
Ingredients
- 1.5 pounds baby potatoes
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- 1 teaspoon paprika (optional)
- Lemon wedges for serving
Instructions
- Wash the baby potatoes and cut them in half if they are large.
- In a large pot, add the potatoes and cover with water. Add a pinch of salt and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and set aside.
- In a large skillet, melt the unsalted butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
- Add the cooked baby potatoes to the skillet, tossing to coat them in the garlic butter.
- Sprinkle with chopped parsley, salt, pepper, and paprika, if using.
- Cook for an additional 2-3 minutes until heated through.
- Serve warm with lemon wedges.
Notes
Choose baby potatoes of similar size for even cooking. For extra flavor, add herbs like thyme or rosemary while cooking the garlic.
