Description

A simple and delicious side dish of tender baby potatoes tossed in rich butter and fragrant garlic.


Ingredients

  • 1.5 pounds baby potatoes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • 1 teaspoon paprika (optional)
  • Lemon wedges for serving


Instructions

  1. Wash the baby potatoes and cut them in half if they are large.
  2. In a large pot, add the potatoes and cover with water. Add a pinch of salt and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and set aside.
  3. In a large skillet, melt the unsalted butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Add the cooked baby potatoes to the skillet, tossing to coat them in the garlic butter.
  5. Sprinkle with chopped parsley, salt, pepper, and paprika, if using.
  6. Cook for an additional 2-3 minutes until heated through.
  7. Serve warm with lemon wedges.

Notes

Choose baby potatoes of similar size for even cooking. For extra flavor, add herbs like thyme or rosemary while cooking the garlic.
