Description

Delightful breakfast pancake poppers that combine the flavors of traditional pancakes in a fun, poppable form, perfect for busy mornings or brunch.


Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin pan.
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt, stirring until well blended.
  3. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until combined.
  4. Gently fold the wet ingredients into the dry ingredients, being careful not to over-mix.
  5. Scoop the batter into the mini muffin pan, filling each cup about two-thirds full.
  6. Bake in the preheated oven for 10 to 12 minutes, or until golden brown.
  7. Cool slightly before serving warm with syrup for dipping or drizzling.
