Ingredients
- 1 cup diced bell peppers (any color)
- 1 cup diced onions (yellow or white)
- 2 cups diced yellow potatoes (Yukon Gold preferred)
- 1 lb lean ground meat (turkey, chicken, or 93/7 beef, raw weight)
- 6 large eggs
- 4 large egg whites
- 1/2 cup cottage cheese (full-fat for best texture)
- 1 cup shredded cheddar cheese (sharp cheddar recommended)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 10 large burrito-sized tortillas (Grande size)
- Your favorite sauce (salsa, hot sauce, or both)
- 1/4 cup fresh cilantro (chopped)
Instructions
- Preheat the oven to 400°F.
- Roast the diced bell peppers, onions, and potatoes with olive oil, salt, and pepper for 20-25 minutes.
- Add the lean ground meat over the roasted vegetables and season. Roast for an additional 10-15 minutes.
- Prepare the egg mixture by blending eggs, egg whites, and cottage cheese.
- Combine the egg mixture with the meat and vegetables, sprinkle cheese on top, and bake for 12-15 minutes.
- Cool for 20-30 minutes, slice, and serve on warmed tortillas with sauce and cilantro.
- Store leftover burritos wrapped in parchment or foil.
