Ingredients
- 2 cups full-fat cottage cheese
- 4 eggs
- 4 tablespoons sweetener of choice
- 2 teaspoons vanilla extract
- 2 tablespoons cornstarch
- 1 teaspoon lemon zest
- 1½ cups blueberries, divided
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 dish thoroughly.
- Strain the cottage cheese for 2–3 minutes to remove excess liquid and set aside.
- In a blender, combine the cottage cheese, eggs, sweetener, vanilla, and cornstarch until smooth.
- Check the texture; it should be creamy. Blend longer if grainy or add a teaspoon of milk if too thick.
- Gently fold in the blueberries and lemon zest.
- Pour the mixture into the greased dish and spread it evenly. Tap gently to release air bubbles.
- Bake for 35–40 minutes, until edges are set and a toothpick in the center comes out mostly clean.
- Allow to cool for 10–15 minutes before slicing and topping with extra blueberries, if desired.
Notes
Strain cottage cheese for a smoother texture. Use fresh blueberries for best results.
