Ingredients
- 1 cup black beans, rinsed and drained
- 1 cup rice
- 1 pound sausage, sliced or crumbled
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- 1 tablespoon olive oil
- Optional toppings: cilantro, lime wedges, avocado
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until translucent.
- Add the sausage and cook until browned.
- Stir in the cumin, chili powder, salt, and pepper.
- Add the black beans, rice, and broth.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
- Fluff with a fork and serve hot, garnished with optional toppings.
Notes
Rinse black beans to remove excess sodium. Consider browning sausage first for extra flavor. Taste and adjust seasoning as needed. Let sit covered after cooking for flavor melding.
