Description

A refreshing and nutritious salad featuring the unique flavor of bitter melon, combined with fresh vegetables for a delightful dish.


Ingredients

  • 2 large-sized bitter melons (bitter gourds)
  • 2 tomatoes
  • 2 onions
  • 1/4 cup drinking water
  • 1/2 cup vinegar
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1 tbsp sugar
  • Anchovies (Dilis) for topping
  • Oil for frying


Instructions

  1. Begin by slicing the tomatoes and onions into thin rounds.
  2. In a pan, heat a little oil over medium heat, then fry the anchovies until crispy. Set aside.
  3. In a separate bowl, combine drinking water, vinegar, pepper, salt, and sugar for the dressing.
  4. Prepare the bitter melon by cutting it in half, removing seeds, and slicing thinly. Squeeze to soften and rinse to reduce bitterness.
  5. In a large bowl, combine the sliced bitter melon, tomatoes, and onions. Pour dressing over and mix gently.
  6. Spoon the salad into serving dishes and top with crispy anchovies.

Notes

Store leftovers in the fridge for 1-2 days, best enjoyed fresh.
