A refreshing and nutritious salad featuring the unique flavor of bitter melon, combined with fresh vegetables for a delightful dish.
Ingredients
- 2 large-sized bitter melons (bitter gourds)
- 2 tomatoes
- 2 onions
- 1/4 cup drinking water
- 1/2 cup vinegar
- 1/4 tsp pepper
- 1/2 tsp salt
- 1 tbsp sugar
- Anchovies (Dilis) for topping
- Oil for frying
Instructions
- Begin by slicing the tomatoes and onions into thin rounds.
- In a pan, heat a little oil over medium heat, then fry the anchovies until crispy. Set aside.
- In a separate bowl, combine drinking water, vinegar, pepper, salt, and sugar for the dressing.
- Prepare the bitter melon by cutting it in half, removing seeds, and slicing thinly. Squeeze to soften and rinse to reduce bitterness.
- In a large bowl, combine the sliced bitter melon, tomatoes, and onions. Pour dressing over and mix gently.
- Spoon the salad into serving dishes and top with crispy anchovies.
Notes
Store leftovers in the fridge for 1-2 days, best enjoyed fresh.
