Soft and chewy blondies infused with the rich, caramelized flavor of Biscoff cookie butter, perfect for sharing.
Ingredients
- 1 cup unsalted butter
- 1 cup Biscoff cookie butter
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup white chocolate chips
- 1/2 cup crushed Biscoff cookies
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch square baking pan or line it with parchment paper.
- In a medium-sized saucepan, melt the unsalted butter and Biscoff cookie butter over low heat, stirring until smooth.
- Remove from heat and allow to cool slightly for about 5 minutes.
- Add the brown sugar and whisk until fully combined.
- Whisk in the eggs until incorporated.
- Stir in the vanilla extract.
- In a separate bowl, sift together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet ingredients, stirring gently until just combined.
- Fold in white chocolate chips and crushed Biscoff cookies.
- Spread the batter in the prepared pan and bake for 25-30 minutes.
- Check for doneness with a toothpick; if it comes out clean or with a few crumbs, they are done.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
Notes
For best results, use room temperature ingredients and avoid overmixing the batter.
