Description

Soft and chewy blondies infused with the rich, caramelized flavor of Biscoff cookie butter, perfect for sharing.


Ingredients

  • 1 cup unsalted butter
  • 1 cup Biscoff cookie butter
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed Biscoff cookies


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch square baking pan or line it with parchment paper.
  2. In a medium-sized saucepan, melt the unsalted butter and Biscoff cookie butter over low heat, stirring until smooth.
  3. Remove from heat and allow to cool slightly for about 5 minutes.
  4. Add the brown sugar and whisk until fully combined.
  5. Whisk in the eggs until incorporated.
  6. Stir in the vanilla extract.
  7. In a separate bowl, sift together flour, baking powder, and salt.
  8. Gradually add dry ingredients to the wet ingredients, stirring gently until just combined.
  9. Fold in white chocolate chips and crushed Biscoff cookies.
  10. Spread the batter in the prepared pan and bake for 25-30 minutes.
  11. Check for doneness with a toothpick; if it comes out clean or with a few crumbs, they are done.
  12. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
