Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup sprinkles
Instructions
- Preheat the oven to 350°F (175°C) and line a mini muffin pan with paper liners.
- In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, vegetable oil, egg, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the sprinkles.
- Fill each mini muffin cup about 2/3 full with batter.
- Bake for 10-12 minutes or until a toothpick comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack.
