Description
One-Pot Lasagna Soup combines the iconic flavors of lasagna into a comforting and easy-to-make soup, perfect for busy weeknights.
Ingredients
- 1 pound ground beef (or turkey)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken broth (or vegetable broth)
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish (optional)
Instructions
- In a large pot over medium heat, add the ground beef. Cook until browned, breaking it up with a spoon for about 5-7 minutes.
- Drain excess fat if necessary, then add chopped onion and minced garlic. Cook until the onion is translucent, about 3-4 minutes.
- Stir in crushed tomatoes, chicken broth, dried basil, oregano, salt, and pepper. Bring to a boil.
- Add broke lasagna noodles to the pot and reduce heat to a simmer. Cover and cook for about 12-14 minutes, or until noodles are tender.
- Drop spoonfuls of ricotta cheese into the soup and allow it to melt slightly, stirring gently to combine.
- Serve hot, topped with shredded mozzarella cheese and fresh basil, if desired. Enjoy!
Notes
Don’t overcook the noodles; they will continue to cook in the residual heat. Feel free to substitute proteins or add vegetables according to preference.
