Description

One-Pot Lasagna Soup combines the iconic flavors of lasagna into a comforting and easy-to-make soup, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef (or turkey)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth (or vegetable broth)
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish (optional)


Instructions

  1. In a large pot over medium heat, add the ground beef. Cook until browned, breaking it up with a spoon for about 5-7 minutes.
  2. Drain excess fat if necessary, then add chopped onion and minced garlic. Cook until the onion is translucent, about 3-4 minutes.
  3. Stir in crushed tomatoes, chicken broth, dried basil, oregano, salt, and pepper. Bring to a boil.
  4. Add broke lasagna noodles to the pot and reduce heat to a simmer. Cover and cook for about 12-14 minutes, or until noodles are tender.
  5. Drop spoonfuls of ricotta cheese into the soup and allow it to melt slightly, stirring gently to combine.
  6. Serve hot, topped with shredded mozzarella cheese and fresh basil, if desired. Enjoy!

Notes

Don’t overcook the noodles; they will continue to cook in the residual heat. Feel free to substitute proteins or add vegetables according to preference.
