Description

A hearty dish perfect for chilly nights, this Beef & Cabbage Stew is comforting and filling, made with simple ingredients and aromatic spices.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 medium head of cabbage, chopped
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the beef and brown on all sides.
  2. Remove beef and set aside. In the same pot, add onions and garlic, sauté until softened.
  3. Stir in the tomato paste and cook for 1 minute.
  4. Add the beef back to the pot along with beef broth, carrots, potatoes, Worcestershire sauce, thyme, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 90-120 minutes or until beef is tender.
  6. Add chopped cabbage and cook for an additional 20-30 minutes until cabbage is tender.
  7. Adjust seasoning if needed and serve hot.

Notes

Serve hot in deep bowls with bread or rolls on the side. Consider garnishing with fresh parsley.
