A hearty dish perfect for chilly nights, this Beef & Cabbage Stew is comforting and filling, made with simple ingredients and aromatic spices.
Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 medium head of cabbage, chopped
- 3 carrots, sliced
- 2 potatoes, diced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the beef and brown on all sides.
- Remove beef and set aside. In the same pot, add onions and garlic, sauté until softened.
- Stir in the tomato paste and cook for 1 minute.
- Add the beef back to the pot along with beef broth, carrots, potatoes, Worcestershire sauce, thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce heat, cover, and simmer for about 90-120 minutes or until beef is tender.
- Add chopped cabbage and cook for an additional 20-30 minutes until cabbage is tender.
- Adjust seasoning if needed and serve hot.
Notes
Serve hot in deep bowls with bread or rolls on the side. Consider garnishing with fresh parsley.
