Ingredients
- Vegetable oil, as needed for oiling wire rack
- 2 pounds chicken wings (wingettes and drummettes)
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
- 1 teaspoon black pepper, coarsely ground
- 3/4 cup barbecue sauce
- 1 tablespoon chopped chives or green onions (optional)
Instructions
- Preheat the oven: Adjust the oven rack to the middle position and preheat your oven to 450°F (232°C). Line a large baking sheet with foil and grease a wire rack with vegetable oil.
- Prepare the chicken: Pat the chicken wings and drumettes dry with paper towels.
- Coat the wings: In a large bowl, whisk together baking powder, salt, and black pepper. Add the chicken wings, tossing to coat them evenly.
- Bake: Arrange the chicken on the wire rack and bake for 20 minutes. Flip the wings over and continue baking until golden and crisp, about another 10 to 15 minutes, or until internal temperature reaches 165°F (74°C).
- Sauce it up: Transfer the baked wings to a large bowl. Add the barbecue sauce and toss to coat evenly.
- Finish baking: For thicker sauce, return the wings to the baking sheet and bake for an additional 5 minutes.
- Serve: Place the wings on a platter and optionally garnish with chopped chives or green onions.

Dry the wings thoroughly for better crispiness and use aluminum-free baking powder.
