Delightful and satisfying BBQ Chicken Tacos with tender barbecue chicken, crunchy coleslaw, and fresh toppings for a crowd-pleaser meal.
Ingredients
- 1 1/2 pounds chicken thighs
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 1/2 cup BBQ sauce
- 3 cups shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup plain Greek yogurt
- 2 tablespoons apple cider vinegar
- 1/4 cup cilantro, chopped
- Salt and pepper, to taste
- 8 corn tortillas
- 1 cup shredded cheddar cheese
- 1 small-medium avocado, diced
- 1/4 cup diced red onion
- 1/4 cup cilantro, roughly chopped
- Optional toppings: lime juice, sliced jalapeños
Instructions
- Start by making your spice mixture. In a small bowl, combine garlic powder, smoked paprika, chili powder, onion powder, cumin, salt, and pepper.
- Season the chicken thighs evenly with the spice mixture. In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken to the skillet and cook for about 10 minutes on one side.
- Flip the chicken and continue cooking for another 5-10 minutes, or until the chicken is fully cooked through. Once done, shred the chicken directly in the skillet and pour in the BBQ sauce. Stir to combine and warm through.
- In a medium bowl, prepare the coleslaw by mixing together the shredded cabbage, carrots, Greek yogurt, apple cider vinegar, chopped cilantro, and a pinch of salt and pepper until well combined.
- If desired, warm the corn tortillas either on a gas stove flame for a few seconds on each side or in a skillet.
- To assemble your tacos, lay some coleslaw on each tortilla, then top with the shredded BBQ chicken, shredded cheese, diced avocado, red onion, and more cilantro.
- Finish off with any optional toppings, such as a squeeze of lime juice or sliced jalapeños, for an extra kick of flavor. Enjoy!
Notes
You can prepare the BBQ chicken a day ahead. Choose bone-in chicken thighs for maximum flavor.
