Description

A simple and delicious Bang Bang Chicken Bowl with tender chicken, colorful vegetables, and a creamy, spicy sauce over rice, perfect for busy weeknights.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice


Instructions

  1. Cook the rice according to the package instructions and set aside.
  2. Cut the chicken breast into bite-sized pieces and season with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat, then add the chicken pieces and sauté until golden brown and cooked through, about 6-8 minutes.
  4. Mix together the sauce ingredients in a small bowl and adjust to taste.
  5. Add mixed veggies to the skillet with chicken and cook for an additional 2-3 minutes until just tender.
  6. Pour the sauce over the chicken and veggies, stirring to coat evenly.
  7. Serve the Bang Bang Chicken over rice and garnish with extra sriracha or green onions.
