Ingredients
- 1 lb chicken breast, diced
- 1 cup jasmine rice
- 2 cups mixed fresh vegetables (e.g., bell peppers, cucumbers, carrots)
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha sauce
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Cook jasmine rice according to package instructions.
- In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes.
- In a small bowl, mix mayonnaise and sriracha to create the spicy mayo drizzle.
