Description

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup jasmine rice
  • 2 cups mixed fresh vegetables (e.g., bell peppers, cucumbers, carrots)
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish


Instructions

  1. Cook jasmine rice according to package instructions.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes.
  3. In a small bowl, mix mayonnaise and sriracha to create the spicy mayo drizzle.
  4. Prepare bowls by layering cooked rice, chicken, and fresh vegetables.
  5. Drizzle with spicy mayo and soy sauce, and garnish with green onions.
  6. Serve immediately and enjoy!
