Description

A delightful dish combining balsamic vinegar, tender chicken, and orzo pasta for a comforting meal that’s easy to prepare.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 3 cups fresh spinach
  • 1/2 cup crumbled feta cheese
  • Fresh parsley, chopped (optional)


Instructions

  1. In a small bowl, whisk together the balsamic vinegar, honey, minced garlic, salt, and pepper to create a glaze for the chicken.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken breasts and cook until golden brown and cooked through, approximately 6-7 minutes per side.
  3. Once the chicken is cooked, pour the balsamic mixture over it and let it simmer for a few minutes until the sauce thickens slightly.
  4. Remove the chicken from the skillet and set aside to keep warm.
  5. In a separate saucepan, bring the chicken broth to a boil. Add the orzo pasta and cook according to the package instructions until tender.
  6. While the orzo is cooking, return to the skillet and heat the remaining tablespoon of olive oil. Add the fresh spinach and sauté until just wilted.
  7. Stir the wilted spinach into the cooked orzo and season lightly with salt and pepper.
  8. To serve, place the chicken over a bed of orzo, drizzle with the balsamic glaze, and finish off with crumbled feta cheese and fresh parsley.

Notes

For more flavor, marinate the chicken in the balsamic glaze for 30 minutes before cooking. For creamier texture, consider adding a splash of cream to the sautéed spinach.
