Description

A delightful breakfast tart combining eggs, creamy cheese, and prosciutto on a flaky pastry crust, perfect for brunch gatherings.


Ingredients

  • 6 large eggs (room temperature)
  • 1 egg (beaten for egg wash)
  • 1 tbsp water (for egg wash)
  • 1 sheet puff pastry dough (thawed)
  • All-purpose flour (for dusting)
  • Kosher salt
  • 2 oz Boursin cheese (or substitute with your favorite goat cheese)
  • 3 tbsp green onion (finely chopped)
  • 4 slices prosciutto
  • 1 ½ tbsp Everything But The Bagel seasoning
  • 2 cups arugula
  • 1 tbsp olive oil
  • 1 tbsp lemon juice (freshly squeezed)
  • ¼ cup Parmigiano cheese (freshly shaved)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare your work surface with all-purpose flour and roll out the puff pastry to fit your baking dish.
  3. Place the pastry into your prepared dish, pressing it firmly into the corners and trimming excess.
  4. Spread the Boursin cheese evenly over the pastry, leaving a border.
  5. Tear the prosciutto slices into smaller pieces and distribute them atop the cheese layer.
  6. Whisk together the eggs, kosher salt, and green onions in a bowl, then pour the mixture over the prosciutto.
  7. Sprinkle the Everything But The Bagel seasoning over the egg mixture.
  8. Bake for 25-30 minutes or until the eggs are set and the edges are golden brown.
  9. Combine arugula, olive oil, lemon juice, and a pinch of salt in a bowl to create a salad.
  10. Serve the tart warm, topped with shaved Parmigiano, cut into squares or wedges, alongside the arugula salad.

Notes

For added flavor, consider including fresh herbs or spices to the egg mixture. For vegetarian options, omit prosciutto.
