Description

Indulge in rich chocolate brownies topped with creamy Baileys buttercream and decadent ganache, perfect for any celebration.


Ingredients

  • 1 box brownie mix plus required eggs, oil, and water as indicated on the box
  • ¼ cup Baileys Irish Cream (optional substitution for water)
  • ½ cup salted butter, softened
  • 2½ cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons Baileys Irish Cream
  • 3 to 4 tablespoons heavy whipping cream
  • 1 cup semi-sweet chocolate chips
  • ⅓ cup heavy whipping cream
  • 2 tablespoons Baileys Irish Cream


Instructions

  1. Preheat the oven according to the brownie mix package instructions. Line an 8×8 inch baking pan with parchment paper and set aside.
  2. Prepare the brownies as directed on the package, substituting ¼ cup water with ¼ cup Baileys Irish Cream if desired. Pour batter into the prepared pan and bake according to the package instructions. Remove and cool completely.
  3. In a mixing bowl, beat the softened butter, vanilla extract, and sifted powdered sugar until combined. With the mixer on low, slowly add 2 tablespoons of Baileys Irish Cream and continue beating. Add heavy cream one tablespoon at a time until the frosting is fluffy and smooth.
  4. Evenly spread the buttercream over the cooled brownies using an offset spatula. Chill in the freezer while preparing the ganache.
  5. Combine ⅓ cup heavy whipping cream with 2 tablespoons Baileys Irish Cream in a microwave-safe bowl. Heat for 45-60 seconds until just simmering. Pour hot cream over chocolate chips and let sit for 3 to 4 minutes, then stir until smooth.
  6. Spread ganache evenly over the chilled buttercream layer. Allow to set on the countertop for 45-60 minutes or refrigerate for about 15 minutes.
  7. Lift brownies from the pan using the parchment paper flaps, cut into squares, and serve immediately.

Notes

For an extra treat, add whipped cream or vanilla ice cream when serving. Store leftovers in an airtight container.
