A delicious and comforting frittata made with fluffy eggs, crispy bacon, and tender potatoes, perfect for breakfast, brunch, or light dinner.
Ingredients
- 8 large eggs
- 6 strips of bacon (chopped)
- 2 medium potatoes (diced)
- 1/2 cup heavy cream
- 1/4 cup fresh chives (chopped)
- 1/2 cup cheddar cheese (grated)
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the chopped bacon over medium heat until crispy. Remove from the skillet and drain on a paper towel.
- Add the diced potatoes to the same skillet and cook in the bacon drippings until golden brown and tender.
- Whisk together the eggs and heavy cream in a bowl, seasoning with salt and pepper.
- Pour the egg mixture over the potatoes in the skillet.
- Sprinkle the crispy bacon and grated cheddar cheese on top.
- Cook on the stovetop for about 3 minutes until the edges begin to set.
- Transfer to the preheated oven and bake for 15-20 minutes until fully set and golden brown.
- Remove from oven and garnish with fresh chives before serving.
Notes
Best served with a green salad, crusty bread, or fresh fruit. Can store in the fridge for up to three days or freeze for longer storage.
