Description

A delicious and comforting frittata made with fluffy eggs, crispy bacon, and tender potatoes, perfect for breakfast, brunch, or light dinner.


Ingredients

  • 8 large eggs
  • 6 strips of bacon (chopped)
  • 2 medium potatoes (diced)
  • 1/2 cup heavy cream
  • 1/4 cup fresh chives (chopped)
  • 1/2 cup cheddar cheese (grated)
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the chopped bacon over medium heat until crispy. Remove from the skillet and drain on a paper towel.
  3. Add the diced potatoes to the same skillet and cook in the bacon drippings until golden brown and tender.
  4. Whisk together the eggs and heavy cream in a bowl, seasoning with salt and pepper.
  5. Pour the egg mixture over the potatoes in the skillet.
  6. Sprinkle the crispy bacon and grated cheddar cheese on top.
  7. Cook on the stovetop for about 3 minutes until the edges begin to set.
  8. Transfer to the preheated oven and bake for 15-20 minutes until fully set and golden brown.
  9. Remove from oven and garnish with fresh chives before serving.

Notes

Best served with a green salad, crusty bread, or fresh fruit. Can store in the fridge for up to three days or freeze for longer storage.
