Ingredients

  • 200g pancetta
  • 4 egg yolks
  • 100g grated Parmesan cheese
  • 400g spaghetti or fettuccine
  • Freshly ground black pepper to taste
  • Salt to taste


Instructions

  1. Cook spaghetti or fettuccine according to package instructions until al dente.
  2. In a pan over medium heat, cook pancetta until crispy.
  3. In a bowl, whisk together egg yolks and grated Parmesan.
  4. Drain pasta and immediately add to the pan with pancetta, removing from heat.
  5. Quickly add egg mixture, stirring until creamy.
  6. Season with black pepper and adjust salt to taste.
  7. Serve immediately, garnished with extra Parmesan and cracked black pepper.

Notes

For best results, use high-quality pancetta or guanciale. Remove the pan from heat before adding the egg mixture to avoid scrambling. Stir quickly to achieve a smooth sauce.
