Description

A quick and delicious Teriyaki Chicken Bowl packed with flavors and vibrant vegetables that the whole family will love.


Ingredients

  • 1 ½ lb boneless, skinless chicken thighs
  • 1 cup teriyaki sauce
  • 1 tablespoon vegetable oil
  • 2 cups cooked white rice
  • 2 cups broccoli florets, steamed
  • 1 cup shredded carrots
  • 1 ripe avocado, sliced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds


Instructions

  1. Heat the vegetable oil in a skillet over medium-high heat.
  2. Add the chicken thighs and cook for 4–5 minutes per side until they’re fully cooked and slightly crispy.
  3. Pour the teriyaki sauce over the chicken and let it simmer for 2–3 minutes until the sauce thickens and becomes glossy.
  4. Remove the chicken from the skillet and slice into strips.
  5. In a small bowl, mix together the mayonnaise, sriracha, and sesame oil to create a spicy mayo.
  6. To assemble the bowls, layer the cooked white rice at the bottom, then add the steamed broccoli, shredded carrots, and sliced avocado.
  7. Top with the sliced teriyaki chicken, drizzle with the spicy mayo, and finish off by sprinkling sesame seeds.
