Description

A refreshing and nutritious salad combining vibrant spinach, sweet blueberries, creamy avocado, and crunchy walnuts, all tossed in a homemade balsamic vinaigrette.


Ingredients

  • 4 cups baby spinach
  • 2 cups fresh blueberries
  • 1 cup raw walnuts
  • 1 medium-large avocado (cut into chunks)
  • 1/2 cup goat cheese (crumbled)
  • 1/4 cup fresh mint (torn into small pieces)
  • Salt + pepper, to taste
  • 1/4 cup olive oil
  • 2 Tbsp balsamic vinegar
  • 1/2 a lemon, juice only
  • 1 tsp garlic powder (or 2 cloves fresh garlic, minced)
  • 1 tsp honey
  • Salt + pepper, to taste


Instructions

  1. Make the Balsamic Vinaigrette: In a small bowl or jar with a lid, add all the dressing ingredients. Whisk or shake vigorously until well combined.
  2. Combine the Salad: In a large serving plate or salad bowl, add the baby spinach, blueberries, walnuts, avocado chunks, crumbled goat cheese, and torn mint leaves.
  3. Dress the Salad: Pour the balsamic vinaigrette over the salad and toss gently to combine all ingredients. Season with salt and pepper to taste.
  4. Serve and Enjoy!

Notes

Best enjoyed fresh. Store leftovers in an airtight container in the refrigerator for up to 24 hours.
