Description
A refreshing and nutritious salad combining vibrant spinach, sweet blueberries, creamy avocado, and crunchy walnuts, all tossed in a homemade balsamic vinaigrette.
Ingredients
- 4 cups baby spinach
- 2 cups fresh blueberries
- 1 cup raw walnuts
- 1 medium-large avocado (cut into chunks)
- 1/2 cup goat cheese (crumbled)
- 1/4 cup fresh mint (torn into small pieces)
- Salt + pepper, to taste
- 1/4 cup olive oil
- 2 Tbsp balsamic vinegar
- 1/2 a lemon, juice only
- 1 tsp garlic powder (or 2 cloves fresh garlic, minced)
- 1 tsp honey
- Salt + pepper, to taste
Instructions
- Make the Balsamic Vinaigrette: In a small bowl or jar with a lid, add all the dressing ingredients. Whisk or shake vigorously until well combined.
- Combine the Salad: In a large serving plate or salad bowl, add the baby spinach, blueberries, walnuts, avocado chunks, crumbled goat cheese, and torn mint leaves.
- Dress the Salad: Pour the balsamic vinaigrette over the salad and toss gently to combine all ingredients. Season with salt and pepper to taste.
- Serve and Enjoy!
Notes
Best enjoyed fresh. Store leftovers in an airtight container in the refrigerator for up to 24 hours.
